5 Minute Healthy Lunch Ideas: Peach + Arugula Quesadilla & Homemade 3 Ingredient Mint Chocolate Ice Cream ..

Summer is one of my favorite times for food. All the Farmer’s Markets are overflowing with fresh herbs & honey…& all the fruits that are in season…just one of the many reasons to be a fan of Summer. So I have been playing around with some ideas of how to use all the fresh herbs!! And today I came up with the Peach+Arugula Quesadilla and Fresh Mint Chocolate Frozen Yogurt/Ice Cream 

It’s a low calorie option that literally takes a few minutes to create!!! 

  • Peach + Arugula Quesadilla 


Ingredients:

  • 1 sliced peach
  • 1/2 cup arugula
  • 1/4 cup or less of mozzarella 
  • Few pinches of dried oregano/basil
  • 1 whole wheat tortilla shell or shell of choice



Slice peach, rinse the herbs and add all the ingredients into the tortilla shell…lightly spray pan with cooking oil and cook on medium heat till the cheese has melted and peaches are warm. 

Once done, top with your favorite salsa! I chose peach mango salsa…mmmmmmmhmmmm. 

Some people grill up the herbs and peaches before adding to meals but this was a quick easy way to eat a healthy lunch that packs flavor!  Adding grilled chicken/bacon/turkey bacon would be delicious too!

It only took about 5 minutes to create and cook y’all!!  

Now for dessert…

  • Fresh Mint Chocolate Forzen Yogurt/Ice Cream 


Ingredients:

  • 1 cup frozen yogurt/ or 1 cup almond milk
  • 1 tbsp cocoa powder or dark chocolate 
  • Handful of fresh mint leaves


 

Combine ingredients into a bowl or straight to blender and bam! That easy!! If choosing the frozen yogurt option you should be able to eat right away or make a smoothie out of it. But I suggest letting it thicken in freezer. 

If choosing the Almond Milk option for homemade ice cream…blend all the ingredients and freeze! Then you’ll have a delicious cup of minty goodness to go along nicely with your quesadilla!

Top with dark chocolate pieces, almonds or coconut flakes!!


This was my lunch today folks. And I like my quesadilla a little crispy and my nails are always chipped..because I’m a mom and have to wash my hands like 2,000 times a day from all the things I do!! 😉 so hang tight with me on the fancy photos. Just a lady in her kitchen trying to keep it healthy! 
But I promise this will keep you satisfied and so easy & fun to make! And best part of all is how healthy it all was. Plus took next to no time to feel like I was a master chef. 😉
