The beauty & point of a “rainbow bowl” is to eat a variety of colorful raw foods. Just think fresh ingredients that will create an array of colors and taste amazing together. Then pick your favorite protein option. Let the whole family create their own!
Here is my personal favorite, Summer “rainbow bowl”…
I love a good salad. It’s easy, fresh & perfect in this heat. Plus, if you make it right, it can pack a ton of nutrients. So while I was in a hurry one day, I just started slicing up everything I could find in my fridge. We were on our way out for the day and a grocery trip was needed.
I had no idea what to make, but I decided a salad would do, mid chopping! And it ended up being one of my favorite salads I have ever had. So I dubbed this the “Rainbow Bowl” method… because calling it a “salad” just doesn’t do it justice….
Full of fruits, veggies & protein options, this will have you satisfied and feeling like a green goddess!
- 1-2 cups Kale
- 1-2 cups Red Cabbage
- 1 diced Peach
- 1/2 cup crumbled Cauliflower
- 4-5 diced Radishes
- 1 diced Cucumber
- 1 diced/shredded Carrot
- 1/2 Diced Green Onions
- 1/2 cup Feta Cheese
- 2-3 tbsp Goddess Salad Dressing
- Top with crumbled almonds
- protein of choice
A lot of these things are in season & I had a little leftover of each..I just started dicing and combining! And it was mouth watering & earthy. It made enough for my husband and I too, luckily!
You can find a healthy dressing option anywhere. I make sure there are no syrups in mine and only fresh ingredients. The “Goddess” options are so delicious. Or you can make your own “green goddess” dressing easily, as well….
Since I loved it so much, I meal prepped an entire array of salad options this week.
So get to slicing! Go pick out your favorite colorful, fresh veggies, a healthy dressing option & meal prep a protein option. You’ll have lunch or dinner for meals to come and can make your very own healthy Rainbow Bowl too.
