3 Healthy Cookies, Only 3 Ingredients Each… 

Have you ever been trying to watch what you eat and the dreaded dessert craving comes on strong?! Well I have your solution babes! 

Now I am no master baker by any means. But these turned out amazing! Oddly shaped indeed, but amazing. So don’t fret if you’re like me…What counts is how it makes us feel not what it looks like right?!! 😜 Afterall, I am just a lady in her kitchen, probably wearing my pjs and playing with kids while I bake. Nothing is staged… this is us..making these as we go! So go ahead & join us please!

I have been dedicated to making this Summer a healthy one, as you can see. I’m making sure I correct what is going on inside of my body so that I can be glowing and confident on the outside. 

And while I definitely have always kept things pretty healthy…I have fell off the bandwagon a bit, so I’m going a little harder to correct that and feel physically well.

My first step…limiting processed foods again!! 

So let’s  start with some soft, decadent cookies shall we…

  • Sweet Toasted Coconut+ Pineapple Cookies


Ingredients 

  • 1 1/2 cup shredded coconut flakes
  • 1 cup fresh pineapple 
  • 1 banana


Preheat oven to 350 degrees.

Mix ingredients until finely chopped and place on lightly oiled cookie sheet. ( I prefer coconut oil spray) Bake For 30 Minutes… Makes about 10 cookies

These taste like Summer! I enjoy these with my Coconut Matcha Latte..yes please!

  • Creamy Chocolate+Avocado Cookies


Ingredients

  • 1 cup ripe avocado flesh
  • 1/2 cup cacao or dark chocolate powder 
  • 1 banana


Blend and bake at 350 for 30 min on a lightly oiled cookie sheet. Garnish with Sea Salt for extra flavor. 

The kids and I are obsessed with these! So creamy and quick to make! Plus dark chocolate is full of antioxidants. I ground my own dark chocolate into powder and chunks. Make sure it’s pure dark chocolate for the added health benefits! And this is great way to sneak in a veggie & fruit!

  • Pumpkin Oatmeal Cookies


Ingredients 

  • 1 cup pumpkin purée
  • 1 banana
  • 2 cups oats


Blend and bake at 350 on light greased cookie sheet. 

Sprinkle cinnamon, nutmeg & butter on top for added flavor when done if you need and bake for another few minutes to melt. The kids preferred it that way but I didn’t mind the pure 3 ingredients! 

You, of course, can add any ingredients into this before baking as well to get added flavor and really make some great Fall inspired flavored cookies.

So there it is! Sweet and simple! Plus takes mere minutes to prepare..a little secret.. I bake them all at once. The texture will be chewy and soft. You’re more than welcome to add flour, baking soda etc to get desired textures out of these too! I love banana flour!


Just remember..keep the ingredients simple and fresh!
